Required products :

  • 3 raw egg whites
  • 1 cup crystal or powdered sugar
  • 100 grams of unsalted roasted hazelnuts

 

Method of preparation :

Beat the egg whites with a mixer on high speed until they become a stiff foam. It is important that the dish you use is completely dry and the egg whites chilled. When you turn the bowl upside down and the foam stays without leaking, then a quick break is enough. Reduce the speed and gradually add the sugar (add one tablespoon of it). The main thing is to preserve the air structure of proteins.

Add the crushed hazelnuts, then slowly and gently stir the mixture with a spoon.

Using a pastry syringe, form kisses into a tray covered with baking paper. If you do not have a syringe, use two spoons.

Place the dish in the oven for 15 minutes at 100 degrees. When the sweets turn red, reduce the temperature to the lowest possible and let the kisses bake for another 40 minutes.
