How To Cook Lasagna With Spinach, Cheese And Roasted Tomato Sauce With Garlic - Recipe

Required products :

For the dough:

  • 1 and 1/2 teaspoon flour
  • 2 eggs
  • 1/2 teaspoon olive oil

For the stuffing:

  • 200 grams of fresh spinach
  • 200 grams of cottage cheese
  • 200 grams of grated mozzarella
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons finely chopped basil
  • salt and pepper to taste

For the sauce:

  • 300 grams of tomatoes
  • 2 cloves garlic
  • 5 tablespoons olive oil

Method of preparation :

From spinach you only need the leaves, so clean it from the veins. Wash the leaves and steam for 5 minutes. When cool, drain the liquid, chop finely and add salt.

Sift the flour into a bowl, add the eggs and a pinch of salt. Make a dough that you knead for 6-8 minutes. Then mix it with spinach. Shape into a ball, wrap in plastic wrap and leave for 20 minutes.

Preheat oven to 180 degrees. Prepare the sauce. To do this, wash the tomatoes and cut them in half, peel the garlic and mash it. Put the tomatoes in a baking dish, sprinkle them with garlic, add salt and pepper to taste, pour olive oil and place in the oven to bake for about 25 minutes. Then mash them with a fork directly into the pan in which they were cooked and return to the oven for another 10 minutes.

Roll out the dough thinly and cut it into rectangular pieces.

Put salted water on the stove, pour 0.5 teaspoon of olive oil and when it boils, put the dough leaves in it. Boil them for 1 minute each.

Increase the oven temperature to 190 degrees.

Mix in a bowl the cottage cheese, parmesan, egg and basil, season to taste.

Grease a square baking dish with oil and arrange a few lasagna sheets on the bottom. Spread half of the filling on top, pour 3-4 tablespoons of sauce and sprinkle with grated mozzarella. Make another layer, alternating the products in the same sequence. Top with lasagna leaves, pour the remaining sauce and bake in the oven for about 20 minutes.
