How To Cook Lentil Meatballs With Edible Yeast And Flaxseed - Recipe

Required products :

  • 2 tea cups red lentils, washed
  • 3 teaspoons vegetable broth
  • 1/2 cup finely chopped onion
  • 2 cloves garlic - finely chopped
  • 200 grams of mushrooms
  • 1 teaspoon dried thyme
  • 1 cup food yeast
  • 1 cup ground flaxseed
  • 1/4 tea cup rice flour
  • salt and pepper
  • olive oil

Method of preparation :

 

Put the lentils, vegetable broth, onion and garlic in a saucepan. Turn the hob to high power to boil the liquid, then reduce the temperature and let the lentils simmer for 20-25 minutes until completely cooked.

Remove from the heat and mash with a fork.

Meanwhile, heat 1 tablespoon olive oil in a pan. Add the chopped mushrooms and thyme and cook until the mushrooms are soft, about 4-6 minutes.

In a blender, grind half of the lentils, mushrooms, ground flaxseed and nutritional yeast to obtain a homogeneous mixture.

Add the remaining lentils and stir to combine the ingredients.

Gradually add the flour to the mixture until the mixture begins to form into a ball. Allow the mixture to reach room temperature, then shape the meatballs.

Heat a pan over medium heat and add olive oil. Fry the meatballs, being careful not to touch each other.

Fry until browned on all sides - about 4 minutes.
