Boil the long grain rice in salted water until ready. Then, using a colander, drain the liquid and rinse the beans.
Clean the tomatoes from the watery part with the seeds, and cut the rest into cubes. Remove the seeds and the pepper, then turn it into cubes. Cut the ham into narrow strips and finely chop the onion.
Cut the peeled avocado in half, remove the stones, cut 2/3 of the fruit into large cubes, pour some of the lemon juice over them.
Pour the remaining amount of avocado with citrus juice and put in a blender along with garlic and olive oil. Season and puree.
Mix the rice with the resulting sauce, add the ham, pepper, tomatoes, onion and avocado.
Serve lettuce on the leaves.
