Prepare an easy healthy lunch of egg salad on children's favorite wholemeal bread. Add a mix of healthy vegetables, fruits and a handful of raw nuts. In just 10 minutes you will have a box full of useful nutrients that will give energy and good concentration to your child for the whole day.

Necessary products:

for egg salad:

  • 2 hard boiled eggs, peeled and sliced
  • 2 tablespoons celery, finely chopped
  • 1 tablespoon yogurt
  • 1 teaspoon Dijon mustard
  • a pinch of black pepper and salt
  • 1 lettuce leaf (or iceberg)

for fruit salad:

  • 1/2 cup blueberries
  • 1/2 banana, cut into circles
  • 125 grams of yogurt

vegetables:

  • 6 cherry tomatoes
  • 1/2 cup broccoli steamed

bread and nuts:

  • 3 small wholemeal slices of bread
  • 20 grams of pistachios

Method of preparation:

egg salad

Mash the boiled eggs in a small bowl with a fork. Add celery, yogurt and mustard. Season with salt and pepper (optional) and mix well. Put a lettuce leaf in the box and pour the salad on it.

fruit salad

In a bowl, mix the blueberries, banana and yogurt. Pour into the school box.

vegetables

In another compartment, put the steamed broccoli and cherry tomatoes.

bread and nuts

Put the pistachios in a small bag or compartment, and next to it the slices of wholemeal bread. Close the box and pack for school.
