Necessary products:
1 kg of aubergines (small unripe)
100 grams of peppers
200 grams of carrots
100 grams of parsley (root)
1 head of garlic
2 grams of ground hot pepper
100 grams of dill

Method of preparation:
Remove the stalks of the aubergines, carve part of the inside (about 3/4 of the length) and simmer for 5 minutes in salted water, then press with some weight and leave for 8-12 hours. Make stuffing of chopped peppers, carrots, parsley, dill and garlic, season with salt and pepper, stir. Fill the aubergines with this mixture, arrange them in jars, fill with vinegar and after 6 - 7 the fragrant aubergines are ready for consumption.
Store in a cool place.
