Chicken roll with dried apricots and walnuts

For the roll you will need:

450 g chicken breasts; a handful of dried apricots; a handful of walnuts; salt, black pepper to taste; a spoonful of vegetable oil; a spoonful of balsamic vinegar; 1 tsp mustard.
