How To Cook Olive Paste With Garlic, Anchovies And Capers - Recipe

Required products :

  • 1/2 cup pitted black olives
  • 1 tablespoon capers
  • 2 anchovy fillets
  • 3 cloves garlic
  • 5 basil leaves
  • 1 tablespoon fresh oregano, marjoram or thyme
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • olive oil

 

Method of preparation :

If you use a food processor, put the olives, garlic, capers, garlic, spices, mustard in a bowl and blend until a paste is obtained. Pour the lemon juice without interrupting the process, add olive oil as needed to obtain a creamy consistency (about 2 tbsp). Try and, if necessary, season with salt and pepper.

 

If you decide to prepare the pasta in a mortar: finely chop the olives, put them in a bowl, add the capers, anchovies and garlic, as well as spices. Crush for a long time until the paste starts to become more and more creamy. Add the mustard, then the lemon juice and pour in enough olive oil. Season with salt and pepper if necessary.
