Required products :
100 grams of butter
4 tablespoons flour
600 milliliters of milk
200 grams of yellow cheese (good with parmesan)
200 grams of mushrooms
400 grams of brown rice
2 zucchini
8 eggs
200 grams of ricotta or cottage cheese (10% fat)
olive oil a
small bunch of parsley and dill
salt
ground black pepper
Method of preparation :
Melt the butter in a pan.
Add the flour and mix. Heat for 1-2 minutes and without stirring, pour in a thin stream of milk.
Let the sauce cook for 2-3 minutes (stir all the time).
Once removed from the heat, transfer to a separate bowl and let cool.
Separate the egg whites from the yolks and add the latter to the sauce.
Grate the zucchini coarsely and pour it into the sauce. Add the chopped dill and parsley, as well as 2 tablespoons of grated yellow cheese. Stir.
Then it's time for the proteins, previously broken down with a pinch of salt. Mix everything.
Cover the bottom of a large pan with a sheet of parchment, which you spread. Spread the dough evenly in the pan and bake for 15-20 minutes in a preheated oven.
The loaf should be completely baked. When this happens, remove from the oven and leave for 10-15 minutes to cool and roll.
It's time to start making the filling.
Wash the mushrooms, cut into pieces and fry until done in olive oil.
Mix them with boiled rice, chopped parsley and dill, the remaining yellow cheese and ricotta (or cottage cheese). Season and stir.
Unroll the egg roll, distribute the finished filling evenly on the surface and roll again.
The appetizer is ready.
You can serve with lettuce leaves and fresh vegetables.
