Beat eggs with a wire for this purpose and pour them into a hot pan (diameter 26 cm) in which you have melted the butter. Season with salt and pepper, fry them until "tight" a little. Then spread the mozzarella cubes, spinach leaves on this base and fry for a few more minutes.
When the eggs are completely ready, mentally divide the omelette into two parts in the middle and carefully cover the other with one half.
Cook for a few more seconds, pressing the surface of the omelet with a spatula. Then turn carefully on the other side and 30 seconds later remove from the pan.
Put in a warm plate and serve immediately with strips of pickled red peppers.
