Necessary products

For the omelet:

  • 600 milliliters of fresh milk
  • 250 grams of flour
  • 6 eggs
  • 1 teaspoon salt
  • 1-2 teaspoons of sugar

 

For the filling:

  • 1 small head of old onion
  • 1 tablespoon sugar
  • 1 tablespoon white wine vinegar
  • 1-2 tablespoons vegetable oil
  • 2 tablespoons chopped dill
  • 150 grams of cream cheese
  • 2 tablespoons chopped green onions
  • 400 grams of canned tuna in oil (2 cans of 200 grams)
  • 150 grams of grated Emmental cheese or other suitable type
  • 1/3 teaspoon ground black pepper

 

Method of preparation :

Turn on the oven to preheat to 225 degrees. Cover the pan with a sheet of parchment and grease it.

In a deep bowl, pour the milk, add the flour (sift beforehand), sugar, salt and beat everything.

Cover the dish and let the mixture stand for 10-15 minutes. Then beat the eggs in it and beat with a mixer until smooth.

Spread the finished dough on the parchment and place the dish on the lowest level of the oven for 20-25 minutes (it should be baked until golden).

When the egg batter is ready, transfer it by turning it over on another sheet of paper that you have prepared in advance.

Take care of the stuffing.

Finely chop the onion and fry it for 3-4 minutes together with the sugar in 1-2 tablespoons of hot oil. Once the sweet crystals have melted, pour in the vinegar, stirring constantly. Let the mixture cook for another 5-6 minutes, then remove the pan from the heat, season with salt and pepper and leave to cool.

Drain the fat from the can and pour it over the onion. Mash the fish with a fork and also add to the other products. Add cream cheese, dill, green onions, season and mix gently.

Preheat the oven, this time to 250 degrees.

Spread the filling on the omelette, leaving 2-3 free inches from the edges. Roll up a roll, which you put in a tray with the "seam" down. Sprinkle with grated Emmental cheese or yellow cheese and bake until the coating melts and the surface turns red.

Then remove the dish, wait ten minutes to cool and cut into portions.

Serve with fresh vegetables.
