Protein-rich omelet topped with healthy avocados and healthy kale full of fiber. This dish is sure to satiate you for a long time.

Required products :

  • 2 large eggs
  • 1 teaspoon low-fat milk
  • pinch of salt
  • 2 teaspoons extra virgin olive oil
  • 1 cup kale tea, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon fresh coriander, chopped
  • 1 teaspoon sunflower seeds
  • pinch of paprika
  • rosehip salt
  • 1/4 avocado, cut into thin slices

Method of preparation :

Beat the eggs with the milk in a small bowl.

Heat 1 teaspoon of olive oil in a small pan with a non-stick coating over medium heat. Add the egg mixture and cook until browned, then turn and cook until done. Transfer to a serving platter.

Put kale in a bowl and season with 1 teaspoon of olive oil, lime juice, coriander, sunflower seeds, a pinch of paprika and a pinch of salt.

Garnish the omelette with kale salad and avocado slices.
