Orzo pasta is an ideal option for a quick dinner. It cooks very easily and does not take much time, there is no danger of boiling it, it would be difficult to stick together, unlike spaghetti. It goes well with any sauce, but served only with olive oil is also delicious. With this recipe we suggest you prepare it with roasted peppers and eggplant sauce.

Required products :

  • 4 red peppers, cut and cleaned of seeds
  • olive oil
  • 2 tablespoons pecans
  • 1 clove garlic
  • 8 basil leaves
  • 40 grams of grated Parmesan cheese
  • 200 grams of pasta orzo
  • 1 eggplant, sliced

Method of preparation :

Turn on the oven to preheat to 220 degrees.

Coat the peppers with olive oil and season with salt and pepper. Put them in a pan and bake for 15 minutes until their skin turns black in places.

Then peel them and grind with walnuts, garlic and a handful of parmesan in a blender.

Bring salted water to a boil and boil the orzo paste in it for 8-10 minutes until soft.

Meanwhile, fry the eggplant in a little fat until browned. Mix it with pepper sauce.

Drain the orzo and pour it over the sauce, stir. If necessary, pour a little of the water in which the pasta was boiled.

Serve with a little Parmesan cheese and pour olive oil.
