Required products :

  • 6 1/2 sheets of gelatin
  • 1/2 - 1 teaspoon of instant coffee dissolved in 240 milliliters of hot water
  • 50 grams of sugar
  • 1 can of 400 grams of condensed milk
  • 400 milliliters of fresh milk

for syrup:

  • 1/2 teaspoon instant coffee dissolved in 150 milliliters of hot water
  • 30 grams of sugar

for coverage:

  • 70 grams of sugar
  • 50 grams of blanched hazelnuts, crushed

Method of preparation :

Put 2 sheets of gelatin (or 2 sachets) in hot water and soak them for 5 minutes. Add the sugar to the coffee and stir to dissolve the crystals. Squeeze the gelatin and put it with the coffee, stir to melt. Divide the mixture into 6 serving bowls and leave for an hour and a half in the freezer to set.

When the gelatin coffee is firm, continue preparing the recipe.

Soak the remaining gelatin. Heat the condensed milk and fresh milk until it boils in the pan, stirring. Cool for 5 minutes. Squeeze the gelatin leaves and put them in the milk, stir. Allow to cool to body temperature. Pour into bowls on tight jelly and put back in the freezer for 1 hour. When the cream is firm to the touch and does not deform, continue.

You should prepare the syrup: the coffee dissolved in 150 milliliters of water, heat in a saucepan and cook until it thickens like a sauce - about 6-8 minutes. Cool completely.

To make the nut coating, melt the sugar in a saucepan and wait (without stirring) to get a light golden color. Then add the hazelnuts, stir and pour into a tray lined with paper. Scatter them and allow them to cool completely.

To remove the panna cotta from the cups, immerse the dishes in hot water for a second or two, then turn into saucers. Drizzle with coffee sauce and garnish with nuts.
