For the pancakes:
3 tablespoons wheat flour (topped)
3 tablespoons wholemeal flour (topped)
1 large egg or 2 small ones
2 teaspoons fresh milk
salt to taste
10 - 12 tablespoons of beetroot decoction
1 teaspoon dried oregano
For the stuffing:
300 - 350 grams of minced chicken
1/2 head onion
70 - 90 grams of cottage cheese with spices
green olives in lemon juice (you can try to replace with cucumbers)

Method of preparation :
Make dough for the pancakes. To do this, beat the egg (eggs) until smooth, gradually add one type of flour (sifting it), stirring with a wire whisk so as not to form lumps. Add the milk in a thin stream and the rest of the flour. Add salt to taste and beat everything until smooth (looks like cream with a fat content of about 20%).
Divide the dough into two equal parts. In one add the beetroot decoction and another 1 tablespoon of flour, beat until smooth. In the second put a teaspoon of dried oregano. Bake 3 pancakes of both types of dough.
You should make the filling. First, fry the minced meat in a little fat, add the chopped onion, salt, oregano and fry until the onion is transparent. Add the cottage cheese and the chopped olives to the prepared minced meat. Stir until you get a completely homogeneous mixture.
Divide the pancakes in pairs: dark + light. At one end of the light put the stuffing and roll up a roll. Place this roll on the red pancake and roll once more. Do the same with the other pancakes. Cut the rolls into pieces and arrange in a suitable dish.
