Necessary products

For the dough:

1.5 teaspoons milk
2 eggs
1 tablespoon sugar
1 teaspoon flour
1 tablespoon olive oil a
pinch of salt

For the stuffing:

400 grams of cottage cheese
2 egg yolks
2 tablespoons powdered sugar
1/2 teaspoon finely chopped dried apricots


For the sauce:

300 milliliters of liquid cream with a fat content of 33%
1 egg yolk
1 teaspoon starch
1 tablespoon powdered
vanilla sugar to taste
1 orange
2 tablespoons brown sugar
2 teaspoons butter
1 tablespoon cognac or orange liqueur

 

Method of preparation :

Make a liquid dough from the warm milk, eggs, sugar, olive oil and flour, add a pinch of salt. Bake thin pancakes, leave to cool slightly.

Grease with oil a suitable shape and deal with the filling.

Pass the curd through a sieve, add the yolks, powdered sugar and chopped dried apricots. Spread this mixture on the pancakes and roll. Arrange them in the prepared dish.

Make the sauce. To do this, combine the cream with the yolks, sweeten with powdered sugar, add the starch and vanilla to taste.

Pour over the pancakes and bake in a preheated oven (at 180 degrees) for about 20 minutes.

Meanwhile, peel the orange and grate its peel, squeeze the juice. Melt the butter in a pan, pour in the brown sugar and citrus strips. When bubbles start to form, pour the juice. If desired, you can add 1 tablespoon of orange liqueur or cognac.

Cook the sauce until it thickens a bit, then remove from the heat.

Remove the finished pancakes from the oven, let them cool a bit, pour the citrus sauce and serve.
