How To Cook Pasta With Cherry Tomatoes, Zucchini And Olives In The Oven - Recipe

Required products :

  • 220 grams of pasta ribbons (farfale)
  • 1 tablespoon olive oil
  • 450 grams of chicken breast cut into small cubes
  • 1/2 teaspoon Italian spice
  • 1/4 teaspoon salt
  • 1 cup onion, chopped
  • 1 small zucchini, cut in half lengthwise and then into thin slices
  • 2 jars marinated artichokes, drained and cut into cubes
  • 2 cups tomato paste with basil
  • 1/2 cup cooking cream
  • 1 cup cherry tomatoes, cut in half
  • 1/4 cup kalamata olives, cut into circles
  • 1/2 cup parmesan cheese, grated

Method of preparation :

Turn on the oven to preheat to 180 degrees. Grease a glass baking dish with grease of your choice. Boil the pasta according to the instructions on the package and drain.

Fry the chicken in olive oil with the Italian spice and salt for 8-10 minutes, stirring often. Transfer the meat to a bowl along with the pasta.

 

Heat the remaining 2 teaspoons of olive oil and fry the onions and zucchini in it for 4-6 minutes, stirring occasionally, until the vegetables are crispy. Add the artichoke, tomato sauce with basil and sour cream and heat for 3-4 minutes.

 

Carefully pour the sauce into the bowl with the pasta and chicken and stir. Transfer the mixture to the baking dish, garnish with tomatoes, olives and Parmesan cheese.

 

Cover with foil and bake for 25 minutes. Remove the foil and continue baking for another 10-15 minutes or until lightly browned.
