Method of preparation:
Put the tomatoes, garlic, salt, pepper, parsley and almonds in a blender. Beat 1-2 times, then add the peppers and beat again.
Gradually add olive oil and continue beating until you get a thick homogeneous slurry. Cool and serve. Pesto is ideal for garnishing pasta, salads and even on its own - in slices. Store in a jar, in a dark and cool place.
