Required products :

  • 1 cup fresh milk
  • 1 teaspoon water
  • 100 grams of butter
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons + 1 tablespoon flour
  • 4 large eggs
  • 1 3/4 tea cups grated yellow cheese
  • freshly ground black pepper to taste

Method of preparation :

  • Preheat the oven to 180 degrees and cover the bottom of a large baking tray with parchment paper.
  • Heat the milk, water, butter and salt in a saucepan over medium heat.
  • After the mixture boils, add the flour. Cook for about 5-10 minutes, stirring constantly with a wooden spoon.
  • Remove the pan from the heat and transfer the dough to a deep bowl.
  • Wait about 5 minutes to cool and add the eggs one by one, stirring with a spoon after each addition.
  • Add the yellow cheese, season with freshly ground black pepper and stir again.
  • Shape the saltines by scooping up 1 tablespoon of the dough and placing it in the pan. Repeat with the remaining mixture.
  • Bake in a preheated oven for about 30 minutes until golden brown.
  • Serve salted warm or at room temperature.
