Required products :
600 grams of fresh lamb
2 onions
1/2 teaspoon raisins
1 teaspoon rice
4 tablespoons butter
1 teaspoon water
1 teaspoon saffron tincture
pinch of salt a
few grains of pomegranate
garlic
Method of preparation :
Wash the rice, boil it in salted water.
Cut the lamb into small pieces (you can also use bone-in meat if you prefer), fry it on low heat in its own fat and a little oil. Then mix it with rice and pour boiling water. Add the chopped onion, raisins, a few cloves of garlic (or put a whole head, which you will then remove). You can add carrots, pitted plums and a little freshly squeezed pomegranate juice.
Let everything simmer under a lid until all the products are ready. Just before removing the dish from the heat, add the saffron tincture and stir.
Decorate as desired and serve.
