Required products :

  • 2 teaspoons water
  • 1/4 teaspoon salt
  • 1/4 tea cup brown sugar
  • 1 large bunch fresh rosemary
  • 2 teaspoons ice cold water
  • 4 pork chops with bone
  • 2 tablespoons butter
  • 1 teaspoon + 1 tablespoon olive oil
  • 2 large onions
  • salt and pepper to taste

Method of preparation :

Put the water and a quarter cup of salt and brown sugar in the saucepan. Heat on a hot plate until the crystals are completely dissolved, then put the rosemary connection (save about 1 tablespoon of the spice) and pour the ice water. Stir until completely cooled.

Put the steaks in a zippered bag and pour the marinade inside. Try to get as much air out of the bag as possible and put it in the refrigerator for 4 to 8 hours. (You can put the meat in a bowl, pour it over it and cover it with foil, then put it in the fridge. In this case, you will have to turn the steaks once in the middle of the time.)

One hour before cooking, remove the meat from the marinade and discard. Dry and allow to drain on kitchen paper.

Meanwhile, cook the caramelized onions. Put the butter and 1 teaspoon of olive oil in a pan, when the fat heats up add the onion, cut into crescents. Sprinkle with 1 tablespoon of brown sugar, salt and pepper to taste. Cover and simmer for 10 minutes.

Remove the lid and stir in the onion. Continue to fry for another 15-20 minutes, stirring occasionally. Be careful not to burn it, the temperature of the hob should not be at maximum. When it starts to caramelize, remove from the heat.

Preheat oven to 200 degrees. Season the meat with salt and freshly ground black pepper, sprinkle with finely chopped fresh rosemary.

Put 1 tablespoon of olive oil in a pan with a fireproof handle. Heat and seal the meat for 2 minutes on each side. Then pour onions around it and bake the dish for 15 minutes, until the meat is ready.
