How To Cook Pork Fillet With Blueberry And Raspberry Sauce - Recipe

Necessary products:

 

for the marinade

 

  • olive oil
  • 1 kg of pork fillet
  • 4 crushed garlic cloves
  • 2 tablespoons Dijon mustard
  • juice and peel of three lemons
  • 2 sprigs of rosemary
  • salt and pepper to taste

 

for blueberry sauce

 

  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 1 tea glass of red wine
  • 1/4 tea cup of orange juice
  • 2 tablespoons sugar
  • 12 fresh raspberries
  • 12 fresh blueberries

 

Method of preparation:

 

Make the marinade by mixing lemon zest and juice, garlic, rosemary and mustard. Add about 2-3 tablespoons of olive oil, salt, pepper and stir the mixture. Spread stretch foil, cut and arrange the meat, overlapping its edges, spread the marinade inside and out. Roll into a tight roll and refrigerate for a minimum of 6 hours.

Preheat the oven to 190 degrees, remove the stretch film and seal the roll on all sides in hot olive oil. Season with salt and pepper, transfer to an aluminum sheet and wrap. Bake the fillet for 30 minutes, turn off the oven and leave it inside.

Heat the oil in a pan, saute the onions, add the remaining products and reduce the heat on the hob. Let the sauce simmer over low heat until it thickens. Remove the pork fillet, cut and serve, garnished with fruit sauce.
