Required products :
700 grams of pork ribs
1 onion
5 cloves garlic
2 tablespoons cognac
0.5 teaspoon rosemary
celery connection
0.5 teaspoon ground sweet red pepper
0.5 teaspoon mix of ground pepper - white, green, black
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon orange juice
1 tablespoon brown sugar
Method of preparation :
Peel the garlic and onion, chop them and grind with a blender until puree. Add all the spices and cognac to it, beat everything together once more.
Cut the celery into small pieces and put it in the aromatic mixture.
Wash the ribs with cold water, dry with a paper towel and cut into portions. Put them in a bowl and spread the marinade on all sides. Close the container with a lid and leave to marinate for 3-4 hours. You can leave for a longer time if you wish.
Arrange the ribs in a pan, cover with foil and place in a preheated oven to 180 degrees for an hour. Then remove the foil, spread the ribs with the juice that came out during baking and return to the oven for another 15-20 minutes to form an appetizing crust.
Make the sauce. To do this, use the juice released during the roasting of the ribs. You will need about 1/2 cup of tea. Pour it into a suitable container, place on the stove and add the brown sugar, honey, orange juice and soy sauce. Bring the mixture to a boil, reduce the temperature to a minimum and leave on the hob until medium thick, stirring constantly.
Keep in mind that the sauce will thicken when it cools.
It is good to serve the ribs as soon as you bake, pour the slightly cooled sweet sauce.
