Wash the mushrooms, cut the large ones and leave the small ones whole. Peel and cut into small cubes two onions, fry it in olive oil over high heat until golden. Then add the duck leg, season with pepper and salt. Fry the products until the liquid has completely evaporated. Set aside a few whole mushrooms for decoration.
Peel, slice and boil the potatoes until done. Puree them by mashing, to which you add the egg, diced butter and salt if necessary. Beat thoroughly.
Cut and fry in a large amount of fat the two onions (for the filling), they should be fried very well, to become deep golden. Pour them into the mashed potatoes, stir to mix, transfer to a pan half. Flatten, put the onion with the mushrooms, distribute evenly and cover with the remaining mashed potatoes and chips. Flatten the layer again and sprinkle with a mixture of mozzarella and yellow cheese, which you have previously grated.
Bake the dish in a well-heated oven until it is covered with an appetizing yellow crust (this will happen in about half an hour).
Decorate with sage.
