Required products :

350 grams of pork ears
2 rings of ginger
white part of 2 green onion stalks
2-3 stars anise
3 bay leaves
3 red dried chili peppers
1 teaspoon Sichuan pepper
1/4 teaspoon sodium glutamate
1 teaspoon sugar
1 tablespoon dry granulated chicken
1 tablespoon Shaoxin wine (or use another suitable)
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon peanut butter


Method of preparation :

Clean the pork ears, wash them and scald with boiling water.

Then cut the greasy areas and put the ears in a saucepan. Fill with water and place the dish on the stove. While the liquid is boiling, heat the peanut butter in a wok and fry the ginger rings and the white part of the green onion in it.

Once the ears start to boil, remove the foam and add the ginger, onion, whole chili peppers, bay leaves, anise, dark soy sauce, Sichuan pepper, wine and dry chicken broth.

 

When the aromatic mixture boils again, reduce the heat and let the ears cook until ready (40-60 minutes) - the skin should soften and the white cartilage should remain firm and elastic. You can use a toothpick to check if they are ready.

Take them out in a separate container in which you will press them. You can use two glass square salad bowls for pressing. Put the ears in one, put the other on them, and in the second a container of water. Let the ears cool.

Pour some of the broth into another saucepan and strain it. Add the light soy sauce, sugar, monosodium glutamate and crushed garlic cloves if desired.

Pour the liquid into the container near the ears, it should be enough to cover them. Put the other dishes on them again. Refrigerate overnight.

 

When you take out the ears together with the formed jelly, cut them into thin strips, which you arrange beautifully in a suitable plate.

 

Drizzle with spicy chili oil, sprinkle with white sesame seeds and green onion rings.

 

Wait 15 minutes before serving.
