Required products :

  • 1 packet of puff pastry, thawed
  • 1 broken egg
  • 2 tablespoons sugar + more to sprinkle
  • 3 thinly sliced ​​apples
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons vanilla extract
  • pinch of salt
  • 1/3 tea cup maple syrup to serve
  • 3 tablespoons bourbon
  • 4 tablespoons butter, cut into cubes
  • 1 teaspoon chilled cream

Method of preparation :

Preheat oven to 200 degrees.

Roll out the dough on a floured surface, cut the edges to make a regular rectangle and cut 16 equal pieces from it.

Transfer them to a paper-lined tray and spread with egg, sprinkle with a little sugar.

Spread another sheet of baking paper and place it on the patties with the greased side down. Place another weight tray on top. Bake for about 20-25 minutes and cool.

Reduce the oven temperature to 175 degrees.

Roll the apples in vinegar, vanilla, salt, 1/3 maple syrup and 2 tablespoons of alcohol. Transfer to a pan, put slices of butter on top. Bake under foil for 30-35 minutes. Remove the foil and mix the fruit carefully, continue baking until lightly caramelized - about 20 minutes.

Just before serving, beat the cream with the remaining 2 tablespoons of sugar and season with the last spoonful of bourbon.

Spread the patties with cream and top with the caramelized apples. Drizzle with maple syrup and serve.
