Necessary products
For the dough:
3 eggs
2-3 tablespoons sugar
1 teaspoon milk
300 grams pumpkin
pinch of salt
cinnamon to taste
1/3 teaspoon baking soda + vinegar in which to put it out
150 grams of flour
1-2 tablespoons oil
For the sauce:
1 teaspoon frozen blueberries (maybe fresh)
1/4 teaspoon water
2 tablespoons honey or sugar (or to taste)
1 teaspoon starch
Method of preparation :
Roast the pumpkin, then mash it until puree.
Beat the eggs with the sugar, add the puree, cinnamon to taste, pour the milk, add the flour and a pinch of salt. Stir, pour in the oil and finally add the soda quenched in vinegar. Stir once more, if necessary, use more flour or milk to adjust the density of the dough.
Bake pancakes in the traditional way in a greased hot pan.
Make a sauce by mixing the blueberries with honey or sugar in a suitable bowl, pour in the water and add a teaspoon of starch. Put the combination on the stove and let it simmer for 7 minutes until it thickens slightly.
An option is to serve the pancakes with ready-made blueberry or other jam.
