Necessary products

2.5 liters of homemade milk

1 cup of natural yogurt or kefir

2.5 teaspoons sour cream (high fat)

8 eggs

2.5 tablespoons salt

 

Method of preparation :

Pour the milk into a thick-bottomed saucepan and place on the hob to boil. Add salt.

Beat the eggs (be sure to use fresh) with a wire for this purpose until smooth, but not until you get a fluffy foam. Add the cream and mix well.

When the milk starts to rise and boil, pour the eggs with the cream and yogurt into the pan. Bring the mixture to a boil again, stirring constantly.

Once it starts to cross, you can remove the pan from the heat.

Pour the contents into a colander, sieve or suitable form for yellow cheese.

Press with some weight. 15 minutes later, turn back and leave overnight to separate the whey completely.

Put the finished quick cheese in a saline solution prepared from 1 liter of whey and 3 tablespoons of salt, store in refrigerator.

The resulting dairy product is not durable and should be consumed shortly.
