Cut the meat into portions, squeeze the lemon juice, grate the peel, grind garlic, rosemary and peppercorns. Mix the lemon peel with salt and 2 tablespoons of olive oil, add the spices. Spread the resulting mixture on the meat and leave it for 30 minutes to absorb the flavors and aromas.
Heat 4 tablespoons of olive oil and fry the rabbit portions in them. Put the finished meat on a plate. Pour the tomato puree, lemon juice, wine into the pan and wait for everything to boil. Then add the meat, close the pan with a lid and let the dish simmer for 40 minutes. Finally, add the chopped olives and capers, salt and pepper. Sprinkle with chopped parsley and serve.
