Required products :

  • 225 grams of soft butter
  • 5 broken eggs + 3 yolks
  • 200 grams of dark chocolate - half chopped and the other half melted and cooled
  • 250 grams of brown sugar
  • 1 1/2 teaspoons flour
  • 1/2 cup natural unsweetened cocoa
  • 1/2 cup raspberry jam
  • 1 1/2 teaspoons crystal sugar
  • 250 grams of raspberries
  • 1/4 tea cup cocoa
  • 1 teaspoon liquid chocolate

Method of preparation :

Turn on the oven to heat to 160 degrees, and grease a rectangular tray measuring 20 by 30 centimeters and cover with baking paper.

Combine the butter, beaten eggs and crushed chocolate. Add the melted chocolate, brown sugar, flour, cocoa, jam and 3/4 of the crystal sugar. Season with 1/2 teaspoon of salt.

Spread half of the dough in the prepared pan and sprinkle with 2/3 of the raspberries on top. Cover with the remaining dough and bake for 34 minutes until dry. Allow to cool.

Prepare a crispy crust, resembling a kiss - beat the egg whites with the remaining 3/4 tea cup of sugar with a mixer until the mixture is smooth and shiny. Add the cocoa and combine. Spread on a tray the same size as the brownie, lined with baking paper. Bake for 30 minutes to obtain a crispy loaf. Allow to cool, then break into large pieces.

Put the cooled brownie in a suitable plate, pour the liquid chocolate, more raspberry jam and crispy pieces.
