Deer are a very tasty type of edible mushroom. They can easily be confused with some poisonous species, so they must be carefully picked or purchased from a reliable source. It is good to prepare them while they are freshly picked or bought. Roe deer have a pleasant hazelnut aroma. They can be fried, baked, breaded, or cooked with other vegetables, meat, or rice. Very tasty and pleasantly crunchy they are breaded but also baked they are fragrant and appetizing. Here are some recipes for making breaded and roasted roe deer at home.

 

Breaded roe deer

Products needed for making breaded roe deer:
  • a few fresh roe deer mushrooms
  • 3 eggs
  • 3 tablespoons white flour
  • 1 tablespoon cornflour
  • 50 milliliters of beer
  • 50 milliliters of sour cream
  • 5 grams of garlic powder
  • pinch of salt
  • 1 tablespoon chili sauce
  • 100 grams of coarsely ground breadcrumbs
  • oil for frying
How to prepare breaded roe deer:

Clean the roe deer mushrooms, cut them, and salt them.

To prepare the breading, mix the eggs with the cream, beer, white, and cornflour. Season with garlic powder, salt, and chili sauce. Stir until thick. Dip the mushrooms in the mixture, then roll them in breadcrumbs and fry in hot fat.

Remove the fried roe deer from the pan and place them on kitchen paper to drain off excess fat.

Serve the roe deer warm, garnished with a sauce of your choice.

Stuffed roe deer mushrooms in the oven

Baked mushrooms in the oven are very tasty and also quick and easy to prepare. The dish is suitable for serving as a snack or main course in combination with a vegetable salad.

 

Necessary products for the preparation of stuffed venison mushrooms:
  • 2 large venison mushrooms
  • 1/2 red onion
  • 1 tablespoon butter
  • 1 tablespoon blue cheese
  • 1 tablespoon breadcrumbs
  • olive oil
  • salt and pepper to taste
  • fresh parsley
  • coriander
  • dill
  • thyme
optional:
  • marjoram
  • chives
  • mint
How to prepare stuffed venison mushrooms:

Turn on the oven to heat at 200 degrees.

Start by cleaning the roe deer mushrooms by removing their stumps (cut them and set aside). Put the mushrooms in a pan and put half a tablespoon of butter on each. Season with salt and freshly ground black pepper, sprinkle with a sprig of fresh thyme and bake in the oven for 10 minutes.

While the venison is baking, heat the olive oil in a pan and fry the onion for about a minute. then add the chopped mushroom stalks and fry until soft. Finely chop the fresh spices.

Remove the baked mushrooms from the oven and fill them with the fried onion mixture. Sprinkle each mushroom with chopped fresh spices (set aside half for serving). Crush blue cheese on the mushrooms and sprinkle with breadcrumbs and olive oil. Put back in the oven to bake for about 5 minutes or until the cheese is melted.

Serve the roasted venison mushrooms and sprinkle with the reserved fresh spices.
