How To Cook Rice With Cauliflower And Hazelnuts In The Oven - Recipe

Required products :

  • 400 grams of cauliflower
  • 80 grams of butter
  • 2 heads of shallots
  • 1 clove of garlic, finely chopped
  • 1 1/3 tea cup Arborio rice
  • 850 milliliters of chicken broth
  • 300 milliliters of cooking cream
  • 1/2 bunch sage
  • hazelnuts to serve
  • parmesan (grated)

Method of preparation :

Put the cauliflower roses in a food processor with an S-shaped knife and break it into crumbs with a few pulsations.

Melt 40 grams of butter and fry the chopped onion and garlic for 2 minutes.

Add the rice and cauliflower to the mixture, then add the broth.

Once it boils, reduce the temperature and simmer for 25 minutes until the rice is cooked.

Remove from the heat and leave for 10 minutes.

Add the cream to the rice and season.

Meanwhile, melt the remaining butter and heat it for 2-3 minutes until it starts to brown. Fry sage leaves in butter for 30 seconds to become crispy chips.

Add them to the rice and serve, sprinkled with hazelnuts and parmesan.
