How To Cook Risotto With Brussels Sprouts And Parmesan - Recipe

Required ingredients :

  • 20 grams of salted butter
  • 1 tablespoon olive oil
  • 1/2 large diced onion
  • 1 large clove of garlic, pressed
  • 2 lemons / peel - one grated and the other cut into long strips /
  • 150 grams of rice
  • 250 grams of Brussels sprouts / 100 grams of grated and 150 grams of chopped /
  • 100 milliliters of dry white wine
  • 600 milliliters of homemade chicken or vegetable broth
  • fresh thyme leaves
  • salt and pepper
  • sunflower oil for frying
  • parmesan / or cheddar cheese /

Method of preparation :

  • In a large saucepan, mix the butter and olive oil over medium-high heat.
  • Stew the onion for about 7-10 minutes until it softens and begins to caramelize.
  • Add the crushed garlic, thyme leaves and strips of lemon zest. Cook for another 2-3 minutes and add the rice, a pinch of salt and pepper and the grated cabbage. Stir occasionally.
  • After about 5 minutes, pour in the white wine and simmer for a few minutes, then little by little start adding the broth. Add a portion of it, wait for it to absorb from the rice and then add the next portion. And so, until the rice is cooked (but not boiled).
  • While the risotto is cooking, heat the sunflower oil over medium heat and fry the chopped Brussels sprouts until golden and crispy. Then, using a slotted spoon, transfer it to kitchen paper to drain off excess fat.
  • When the risotto is ready, add a lump of butter, 1 handful of grated Parmesan cheese and half of the fried Brussels sprouts. Stir.
  • Spread it on a plate, garnish with the remaining Brussels sprouts and sprinkle with lemon juice and grated lemon zest.
