How To Cook Roasted Beans With Onions - Recipe

Required products :

  • 500 grams of large white beans
  • 1 kg of onions
  • 150 milliliters of oil
  • 4 - 5 cloves of garlic
  • 3 bay leaves
  • 2 teaspoons ground red pepper (sweet)
  • 1 teaspoon ground or crushed hot pepper
  • 1 tablespoon tomato paste
  • pepper

Method of preparation :

Fill the beans with water overnight. Then drain, wash the beans and pour clean water over it. Bring to a boil and when this happens, replace it with hot water, the amount of which should be two fingers above the beans. Bring to the boil. When soft, add the bay leaf and chopped onion. Strain the prepared beans with a colander and save the water.

Cut the remaining onions into semicircles (the amount does not scare you) and stew in oil until soft. To use less fat, you can pour in the water you saved from cooking the beans. Towards the end of cooking, add the crushed garlic cloves, pepper (red and black), hot pepper, salt.

Take a suitable container (preferably clay) and grease it with oil. Distribute at the bottom a row of beans, followed by a layer of onions, again beans, onions and so on until exhausted.

Dissolve the tomato puree in the water left over from cooking the beans and pour it over the other products (it should be 1 finger above them). If desired, you can arrange slices of tomato and / or pepper on the surface.

Place the dish in a preheated 180 degree oven and let it bake for about an hour. It is ready when the liquid evaporates and the dish thickens, but it should not be dry. It tastes better when it cools down. You can sprinkle with chopped parsley before serving.
