Required products :
8 eggplants
400 grams of goat cheese
100 grams of buckwheat honey
50 milliliters of olive oil
20 grams of parsley
salt to taste
Method of preparation :
Wash the aubergines, cut off the unnecessary parts and place in an oven preheated to 200 degrees for about 20-30 minutes (the exact time depends on the size of the vegetables).
When they are ready, cut them in two and carve the inside. Put in a bowl and add the goat cheese, finely chopped parsley, honey and a pinch of salt. Finally, pour olive oil and mix everything.
Fill the carved eggplant skins with the resulting mixture.
Arrange them in a pan and return to the oven for 10 minutes.
You can serve it just like that or with a sauce made from 1 part balsamic vinegar, 1 part honey, 4 parts olive oil, a pinch of salt and a pinch of ground black pepper.
