How To Cook Roasted Salmon With Zucchini, Lemon And Herbs - Recipe

Required products :

  • 4 zucchini, cut into small cubes
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper

For salmon :

  • 2 tablespoons brown sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, pressed
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • salt and freshly ground black pepper
  • 4 salmon fillets
  • 1 lemon, sliced
  • 2 tablespoons fresh parsley, finely chopped

Method of preparation :

  • In a small bowl, combine the brown sugar, lemon juice, mustard, garlic, dill, oregano, thyme and rosemary. Stir and season with salt and pepper.
  • Arrange the zucchini in a pan covered with baking paper and sprinkle with olive oil. Season with salt and pepper.
  • Arrange the salmon fillets on top and spread them with the herbal mixture.
  • Distribute the lemon slices and bake in a preheated 200 degree oven for about 18-20 minutes.
  • Sprinkle with fresh parsley and serve.
