Cut the onion into slices, then into semicircles, put them in a bowl and pour boiling water. After a few minutes, drain the liquid, add the sugar and vinegar to the onion, pour boiling water again, which should cover the onion. Cover with a lid and leave until the other products are ready.
Boil the eggs hard, peel them and cut.
Peel the aubergines, cut the rest into thin pieces and fry in oil for 15 minutes over medium heat. When cool, mix with the eggs, chopped tomatoes and pickled onions that you have drained from the liquid.
Add fresh dill if desired, sour cream or mayonnaise, season and stir.
The salad is ready, enjoy it.
