Required products :

  • 750 grams of small fresh potatoes
  • 220 grams of young green beans
  • 3 eggs
  • 1 bunch of basil
  • 1 small clove of garlic
  • 40 grams of blanched almonds
  • olive oil
  • 40 grams of cheddar
  • 1 lemon - peel and juice

Method of preparation :

Wash the potatoes without peeling them, rubbing them well so that part of the skin falls out. Cut the larger ones. Boil them in salted water for 25 minutes.

Blanch the green beans for 4 minutes, you can add it to the potatoes.

Boil the eggs for 7 minutes, putting them directly in boiling water. When they are ready, immerse in cold water and leave to cool, peel and cut in half.

Prepare the pesto by placing the basil leaves in a mortar and crushing them together with a pinch of salt. Add the garlic, most of the almonds and cheddar. If you wish, you can grind everything in a food processor.

When a pulp is obtained, add lemon peel and juice to taste.

Season the hot potatoes with the pesto, add the green beans. Put in a large serving dish, arrange the eggs and sprinkle with the remaining almonds and cheddar.
