Method of preparation :
Boil the potatoes whole and peel when they cool a bit, then cut into large cubes.
Drain the liquid from the chopped sauerkraut and spread on a board for a while to dry a bit.
Put the potatoes in a large bowl, add the mushrooms.
Cabbage follows.
Finely chopped onion.
It remains to season the salad with ground pepper, a little vinegar (wine or apple) and vegetable fat.
Finally, sprinkle with chopped fresh parsley and enjoy!
