How To Cook Salad With Quinoa, Grilled Halloumi Cheese And Pesto - Recipe

Required products :

  • 1 1/2 teaspoon quinoa, rinsed and drained
  • 140 grams of kale (or spinach)
  • 250 grams of halloumi cheese, cut into small plates
  • 200 grams of chopped cherry tomatoes
  • 4 thinly sliced ​​radishes
  • 1 avocado, diced

for dill pesto:

  • 60 grams of arugula
  • 1/4 tea cup dill
  • 1/4 tea cup walnuts
  • 1 clove garlic
  • 1/3 teaspoon avocado oil

Method of preparation :

Put the quinoa in 3 glasses of water (750 milliliters) and boil for 15 minutes until the liquid is absorbed by the beans. While warm, add the kale (chopped) and stir. Allow to simmer for 10 minutes.

Meanwhile, prepare the pesto with dill: put all the products (excluding the fat) robot and grind. Pour the oil in a thin stream while pureing. Season to taste.

Heat a grill and spread the halloumi cheese. Bake for 2 minutes on each side.

Add the tomatoes and radishes to the quinoa and transfer to a serving bowl. Spread halloumi cheese, avocado slices and pesto on top.
