Wash the jars well with hot water, then let them dry for 1 hour in the oven at 120 degrees. Once cooled, grease them with oil.
Put olive oil in a pan and let it heat up. Put the fish fillets skin side down, reduce the temperature and let them bake for 2 minutes. Turn and bake for another 2 minutes. Cover with a lid for a minute, then turn off the stove, but leave the fish in the pan on the heat for another 5 minutes.
Melt the butter on low heat, after it liquefies, continue to cook it for another 8-9 minutes until the white foam comes to the surface.
Meanwhile, chop the salmon with a fork and season with nutmeg, pepper and Worcestershire sauce. Stir and clean the bones, if any.
Strain the butter through cheesecloth to remove milk residue.
Pour half of the oil over the salmon and heat the rest again for 5 minutes, stirring occasionally.
Distribute the fish between the jars and pour the oil on top. Refrigerate and store for up to 3-4 days in the refrigerator.
