This easy recipe for roasted salmon with broccoli is prepared quickly for dinner during the week. You can always replace salmon with chicken or other fish.

Required products :

  • 8 cups broccoli
  • 2 cloves garlic, chopped
  • 3 tablespoons extra virgin olive oil
  • salt and pepper to taste
  • 1/2 cup pistachios, crushed
  • 2 tablespoons onion, finely chopped
  • grated half a lemon + slices for serving
  • 4 teaspoons mayonnaise
  • 400 grams of salmon fillet, cut into 4 portions

Method of preparation:

Preheat oven to 220 degrees. Place baking paper in a pan and grease it.

Put the broccoli, garlic, 2 tablespoons olive oil, salt and pepper in the pan. Stir to taste good. Bake for 5 minutes. 

Mix in a small bowl pistachios, onions, lemon peel, 1 tablespoon olive oil, salt and pepper to taste. Spread 1 teaspoon of mayonnaise on each portion of salmon and spread with the pistachio mixture.

Put the salmon in the pan with the broccoli and bake until the salmon is ready and the broccoli is soft.

Serve with lemon slices if desired.
