Required products :

  • 1 head red onion - cut into thin circles
  • 120 grams of pickles - thinly sliced
  • 1/2 cup cucumber brine
  • 3/4 teaspoon mayonnaise
  • 1/3 tea cup chopped dill
  • 2 teaspoons chili sauce
  • 1 teaspoon black pepper
  • 2 teaspoons lemon juice (+ slices per serving)
  • 1 tablespoon salt
  • 2 eggs - broken
  • 1 1/2 tea panko breadcrumbs
  • 1/2 teaspoon flour
  • 2 fillets of halibut (divided in half diagonally)
  • 2/3 tea cup olive oil
  • 3 teaspoons chopped iceberg lettuce
  • 8 slices of bread
  • 1 cup homemade potato chips

Method of preparation :

Mix onion, pickles and brine in a bowl.

In another, mix the mayonnaise, dill, hot sauce, pepper, 2 tablespoons lemon juice and 1/2 teaspoon salt.

Arrange the eggs, breadcrumbs and flour in 3 plates. Season the fillets with half a spoon of salt and bread them in the flour, then in the eggs and finally in the breadcrumbs. Transfer them to a plate.

Heat a pan over medium heat.

Fry the fillets in olive oil for 2-3 minutes on each side until golden. Remove them from the pan and place them on kitchen paper to remove excess fat from them. Sprinkle with another 1/2 teaspoon of salt.

Put 1 full tablespoon of the mayonnaise mixture on one side of the bread slices. Put on half of them an iceberg, 1 fish fillet, some potato chips and 1/4 tea cup of onion and cucumber. Close the sandwich with the other slice.

Transfer to a plate and serve with more potato chips and lemon slices.
