How To Cook Saturating Salad With Chicken And Peanut Butter Dressing - Recipe

Required products :

  • 1 large sweet potato, cut into cubes
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • salt and pepper
  • 500 grams of chicken breast (2 pieces)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 small clove of garlic, finely chopped
  • 2 tablespoons peanut butter
  • 1/4 teaspoon lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 4 teaspoons boiled brown rice
  • 1 avocado, thinly sliced
  • 2 teaspoons baby spinach
  • 1 tablespoon coriander or parsley
  • 1 teaspoon sesame seeds for sprinkling

Method of preparation :

Turn the oven to 220 degrees.

In a large pan put potatoes, onions and pour a little olive oil, season. Bake for 20-25 minutes.

In a large skillet, heat 1 tablespoon olive oil. Season the meat on both sides with salt, pepper, ginger and garlic powder. Fry it until done - about 8-10 minutes per side.

Mix garlic, peanut butter, lime juice, soy sauce and honey. Mix with the remaining 1 tablespoon of olive oil.

Divide the rice into 4 bowls. In each put the chicken, spinach, sweet potatoes and sprinkle with coriander (parsley). Sprinkle with sesame seeds and pour over the peanut butter dressing.
