How To Cook Skewers Of Fish Bites With Mango And Cherry Tomatoes - Recipe

Required products :

for fish bites :

  • 2 green onions, chopped
  • 400 grams of cod fillet, without skin
  • handful of fresh coriander (or parsley)
  • 1 egg
  • 1-2 teaspoons of curry powder
  • 1 teaspoon lemon juice
  • 1 tablespoon corn flour
  • 1 tablespoon ground almonds
  • frying fat

for serving :

  • 12 pieces of fresh mango (or other seasonal fruit)
  • 3 slices of cucumber, cut into quarters
  • 6 cherry tomatoes, cut in half
  • 12 fresh coriander leaves (or parsley)

Method of preparation :

Put all the ingredients for the fish bites in a food processor and blend until smooth. Form 24 mini balls.

Heat the fat and fry the fish bites on both sides until golden brown.

String them on the skewers, adding a slice of mango, cucumber, cherry tomato, coriander leaf (or parsley).

Serve and enjoy the crispy and crunchy crust in combination with fresh vegetables and juicy mango.
