Cut the meat into pieces and marinate them overnight in dried ginger, turmeric, coriander and 1 tablespoon of oil.
Grind garlic, ginger, dried hot pepper, onion and coriander stalks in a robot.
Put the coconut oil in a saucepan to heat. Then add the potatoes and fry until golden. Take them out on a plate. Put the pieces of meat in the pan and fry them until they turn brown (work in batches). Season with a pinch of salt.
When the meat is browned, add the onion and vegetable paste and stir to cook a little. Add a few tablespoons of the chicken broth and wait for the liquid to reduce, then pour in the rest. Return the potatoes to the pan and simmer for about an hour, an hour and a half. When the meat and potatoes are fully cooked, add the fish sauce, lemon juice, coconut milk and bring the liquid to a boil again.
Remove from the heat, add the coriander leaves and serve the soup with lemon slices and fried onions.
