Necessary products

For tomatoes:

  • 600 grams of cherry tomatoes
  • 2 tablespoons cold pressed olive oil
  • 6 cloves garlic
  • black pepper and salt

For the breadcrumbs:

  • 1/2 cup breadcrumbs (coarsely ground)
  • 2 tablespoons cold pressed olive oil
  • 1 onion (finely chopped)
  • 1 clove garlic (finely chopped)
  • black pepper and salt

For spaghetti:

  • 400 grams of spaghetti
  • 3 sprigs of basil
  • 3 tablespoons cold pressed olive oil
  • grated parmesan for serving


Method of preparation :

Remove the top layer of the 6 garlic cloves, mash them with the flat part of a knife and arrange in a tray on a sheet of parchment. Put the cherry tomatoes in the same dish, season to taste and bake in the oven, which you have preheated to 200 degrees. It takes about 20-25 minutes, turning the tomatoes every 5-10 minutes (they should soften and begin to lose their shape).

Place a large saucepan of salted water on the hob. Once the liquid boils, put the spaghetti in it. A minute before they are ready, add a few basil leaves.

While the pasta is boiling and the tomatoes are baking, prepare the garlic spice. In a small skillet, heat the olive oil over medium heat and pour the onion into it. Fry it for about 1-2 minutes, stirring constantly (until transparent). Then add the garlic and breadcrumbs. Cook until the latter are golden and crispy (stir constantly).

Then remove from the heat and season with pepper and salt.

When the spaghetti is cooked, drain the water with a colander and remove the basil leaves.

Pour the pasta into a large bowl, add the already roasted tomatoes and olive oil, sprinkle with chopped fresh basil leaves.

Stir and sprinkle with crispy garlic breadcrumbs and grated Parmesan cheese.
