Fry the bacon in a saucepan until it starts to change color, then add the onion and garlic and fry for 5 minutes. If the mixture is too dry, add a little fat. Add the hot red pepper, chopped purple potatoes, water (or broth) and season with sea salt to taste. Cover and cook until the potatoes are soft (20-25 minutes), then blend until smooth with the coconut milk.
Serve, garnished with bacon and chives, and sprinkle with cream.
If you are making a vegan or vegetarian version, do not use bacon, but garnish with nuts and coconut cream.
