Heat 1 tablespoon of olive oil and fry the onion, garlic and chili pepper in it for 3-4 minutes until soft. Add the wild curry spice and tomato paste. Cook for 1 minute, then put the carrots and drained lentils (pre-soaked for 1 hour). Pour the tomatoes and 1 liter of water, season with salt and pepper.
Let the dish simmer for about 35-40 minutes until the carrots are soft.
Cool and blend, pour the lemon juice.
Serve with crispy curry leaves, garlic, ginger or serve with croutons.
