How To Cook Spicy Meatballs With Chickpeas And Spinach In Tomato Curry Sauce - Recipe

Required products :

  • 1 cup + 2 tablespoons chickpea flour
  • 4 cups spinach, chopped
  • 1/3 cup + 2 tablespoons olive oil
  • 1/4 cup red onion, chopped
  • 1/4 cup yogurt
  • 1 small hot pepper Jalapeno, chopped
  • 1/2 teaspoon salt
  • 2 teaspoons coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 tablespoon curry powder
  • 1 tablespoon ginger root, chopped
  • 1 can of diced tomatoes
  • 1 can of tomato sauce
  • fresh parsley or coriander to serve (optional)

* A tea cup is used to measure the quantities.

Method of preparation :

Mix the chickpea flour, 1/2 cup spinach, 1/3 cup olive oil, red onion, yogurt, hot jalapeno pepper and salt. Form 16 small meatballs from the resulting mixture.

Heat the remaining 2 tablespoons of olive oil and fry the coriander, cumin and mustard seeds in them. Cover with a lid and cook for about 30 seconds until they start to crack. Pour the curry powder, ginger, tomatoes and their juice and tomato sauce. Stir and add the remaining 31/2 cups of spinach and a pinch of salt. Let the mixture simmer over low heat.

Pour the meatballs into the sauce, cover and cook, stirring occasionally, until soft (about 20 minutes).
Serve the dish by sprinkling with fresh parsley if desired.
